Toast the pine nuts

Toast the pine nuts in a frying pan over low heat for 5 minutes, tossing regularly, until fragrant but not burnt.

Make the pesto

In a food processor, combine the pine nuts, lemon juice, garlic cloves, salt, and black pepper and pulse until well chopped. Add the basil and pulse until combined. While the food processor is running, drizzle in the olive oil. Add the Parmesan cheese and pulse briefly to combine.
