Preheat the oven

Turn the oven to 180ºC.

Make the seasoning

Combine the salt and black pepper.

Roast the chicken

Rub the chicken thigh all over with oil until well coated. Sprinkle the seasoning mixture over the chicken thigh. Place the chicken thigh onto a baking tray covered in baking paper and put the tray in the oven. Roast the chicken for 15 minutes, rotating the tray halfway through to ensure even heating. After 15 minutes, check that the thigh is cooked; the meat has reached a temperature of 70ºC and when a knife is inserted into the thigh, any juices are clear. Continue to cook for a additional 5 minutes if the chicken thigh is not yet cooked through. Serve
